The first Friday of August was also National Ice Cream Sandwich Day. It's a multi-day process to put these together, so they were not actually ready to be offered to any takers until the next day...but boy howdy are they a fine treat. The top and bottom cookie portions cooked up rather tender and rich, and the ice cream was supremely sweet and vanilla'd and laid down as an extra thick middle layer...but once frozen and set up after cutting into individual sandwiches, these rascals were a marvel to behold, briefly, before they disappeared in a few snappish bites and rushed swallows.
