Meal No. 4159: Skillet Deep Dish Pizzas

Dateline: Wed 22 July. Keeping the Wednesday tradition going, the Roediger House welcomed Amy back for another fine night of supper and hanging out. Knowing her fondness for pizza, it was an easy call to make that the featured menu for the four of us, especially because I regularly hanker for it myself. Two deep dish skillet pizzas with pretty awesome crusts were prepped: one straight pepperoni, and the other was built half pepperoni/bacon and half barbecue chicken/bacon/red onion/blue cheese. That menu had a lot of folks feeling happy that night. Who doesn’t love some pizza, eh?

Meal No. 4139: Detroit-Style Pizza

Dateline: Wed 24 June. As summer started up, we had one night of intense storm activity, and the resulting power loss on one evening threw off my best-laid plans that week. But I also made a promise to dear friend Amy that we would have pizza on her regular Wednesday visit, so the celebration of National Detroit-Style Pizza Day was a day late...but not a dollop short of sauce! Although I felt like this was a less successful attempt, we still wolfed down our respective portions. The take-away lesson is that it only gets better with practice.

Meal No. 4083: French Bread Pepperoni Pizza

Among the things that have caught my eye sliding across the Instagram feed has been various versions of French bread pizza. On Tuesday of last week, after taking a return to Walmart, I spied a big ol' loaf of French bread for $1.62. That sealed the meal deal for me. I came home, defrosted some homemade pizza sauce, whipped up a batch of garlic butter, and put together a big pan of pepperoni French bread pizza. Is it better than regular pizza? Absolutely not. But still pretty good and filling? Yep.

Meal No. 4010: Skillet Sausage Pizzas

Christmas Eve at the Roediger House was a pretty nice Wednesday, for late December: warm enough for good outside time with the dogs and suitable for casual house endeavors as per one's mood. With breezes to keep me from overheating, I knocked out a 5.1 mile walk in the early afternoon, in fact. And then, with four at the dinner table, I depended on prepped overnight mostly-no-knead pizza dough so that we could all feast on skillet sausage pizzas that night. Laid out on a bed of homemade pizza sauce that I'd retrieved from the freezer, adorned with almost enough cheese, and helped across the finish line by well-scattered Italian sausage, we slayed our slices and wiped away any wondering sauce and bellied up to the buffet bar for more because it's what the moment called for. One of the pizzas also got an abundance of marsala-sautéed mushrooms to go with that sausage, and there would one find the winning slices, for sure.

We got pretty close to 70°F on that Christmas Eve, by the way. Once the direct sun is hitting my Tempest weather station, I recognize there is a false elevation of the temp reading...but still! It's almost the end of December and I was enjoying outside in my short sleeves. Heck, yeah!

Meal No. 3994: Barbecue Blackened Shrimp, Bacon, and Blue Cheese Puff Pastry Pizza

When I made that delicious blackened shrimp bowl on December’s first Thursday, a handful of those tempting sea delights were left over...perfect for helping top and fortify a Sunday night puff pastry bistro pizza. Also on board for that culinary ride: bacon, blue cheese, white cheddar, mozzarella, and a base of homemade barbecue sauce. The hearty combination of complementary flavors was well enough aligned that I completely forgot that I’d planned to toss on some diced red onion.

Meal No. 3959: National Sausage Pizza Day

Making only its fourth appearance at the Roediger House on Saturday night a week ago: Detroit-style pizza.

This time, it was in recognition of National Sausage Pizza Day, so I subbed sweet Italian sausage for the more traditional pepperoni. That's not the only ingredient that requires an alternative, because I cannot easily obtain true Wisconsin-style cheddar and have to make do with what is available here. On these limited trials of this marvelous rectangular pie, though, I've not yet been faulted for these alterations.

Meal No. 3945: Skillet Pepperoni Pan Pizza

By Tuesday of last week, I at long last was able to pull off pizza, with our faithful and easy deep dish skillet approach as cleverly conceived of by culinary guru J. Kenji Lopez-Alt. The dough turned out especially hearty in flavor and terrific in chew (as the pie gods ordain!), the saved homemade sauce had just enough zing, the melted cheese lay about in a well-managed balance, and the pepperoni occupied their proper population density stations. Its goodness called for eating two or seven more slices but my more disciplined appetite exerted a moderating maintenance of rash desires.

Meal No. 3886: National Detroit-Style Pizza Day

Ah, June 23: you rolled up on us with the extra gift of a National Day celebration of Detroit-style pizza, and I was ready to do my part to mark the occasion. No one has demanded that I employ tricks upon myself to increase variation in meals and other culinary pursuits...I just need these ruses to help me shake things up from time to time. Like the Dungeons & Dragons dice roll I created a year or so ago, following along with the National Day of "_____" calendar also forces my hand a bit. That’s how Monday a week ago found me getting an early afternoon start on Detroit-style pizza, for National Detroit-Style Pizza Day.

Sticking with a standard approach and depending still on the recipe I’d used the two previous times I’d made it, the outcome was just what I’d hoped for. These are gorgeous gracious loaded squares, once cut from the special pan, all cheesed and amply (and freshly) sauced, the charred bits giving crunch and the pepperonis giving slight heat. It was especially good that night, a joyous dinnertime where the delights were all culinary in all the best ways.

I was glad for the leftovers as well, because the following evening I had a chance to bring a virtual presentation to a group of doctoral students working under Dr. Zwadyk, and an early microwaved supper helped me work around that happy commitment. It was also wise to keep the oven off...and I forewent my evening stroll since that Tuesday night it was still almost 90°F (and real-feel of 102°F!) at 9:30 pm!

Meal No. 3870: Skillet Pan Pizzas

I'd let too much time pass since the last round of skillet pan pizzas, but fortunately I've got an easy and stress-free approach to them, thanks to J. Kenji Lopez-Alt. In the spirit of the personal versions that were a staple of college and early working years, when I'd take in lunch at a local Pizza Hut, these slices that come from a larger 12-inch skillet were crispy with the right degree of chew, and they carried well the base of homemade tomato sauce and toppings. It was a pepperoni kind of night on the first Monday of June, and there were no leftovers once we'd done all the damage we could.

Out busted the first blooms of the Strutter's Ball daylilies by the back door that morning, and once again they are so very lovely. And so too is the young lady of the house, as captured in one of her precious moments up on the third floor.

Meal No. 3806: Buffalo Chicken Tenders Skillet Pizzas

The previous evening's abundance of fried buffalo chicken tenders lent themselves nicely as a central topping for the latest batch of skillet pan pizzas, made for supper Thursday of last week. A mix of chipotle barbecue sauce and buffalo wing sauce coated the morsels; I threw together a fresh batch of tomato sauce; there was bacon, white cheddar, and grated parmesan down low plus a finishing shake of provolone and mozzarella in the final minutes to avoid browning it too much. On the platters, it was a pleasure.

And a whole pizza left over? Friday was covered!

Meal No. 3800: Deep Dish Bacon Onion & Cheddar Pizza

Tuesday's drear and chill were utterly depressing. Pizza made me feel better. Especially because the dough had undergone a multi-day cold ferment which brought out a marvelous level of flavor that I don't always get to achieve. With pizza sauce already made a while back and vacuum-sealed to store in the freezer, it was a cinch to bring back to life with the sous vide immersion circulator. I haven't been to the grocery store in a surprisingly long while, but with what I had on hand I was able to serve up bacon onion cheddar deep dish skillet pizza. It was good.

It was also perfectly wonderful as leftovers the following evening, along with a very tasty salad left behind as extras for the film crew's craft service over the weekend. That's where I was extra glad to have homemade Thousand Island dressing at the ready.

Perhaps you're thinking, as I head into another topic within this post: replace the damn thing already. But yes: Tuesday morning I was greeted with a non-functioning downstairs HVAC system again. We tried the multiple resets of it and never got it going. So Wednesday I called Webb and of course it started right up for the technician.

Meal No. 3795: Chicago Deep-Dish Skillet Pizza

If you let enough time get away from you, it might allow multiple weeks to pass without returning to a straightforward and rewarding approach to deep-dish pizza. I tried to remedy that last Monday evening, my final free day at home before heading into a full set of workdays. (After today, in fact, we'll roll right over into the latest welcome invasion of film students from the University of North Carolina School of the Arts here in Winston-Salem, as they come for filming here this weekend.) The ease of dough preparation, with a few minutes' effort before bedtime Sunday night, depends on time to do the work, as the slow rise occurs over not quite 24 hours and the future crust is infused with all the best flavors from fermentation factors. A little more kneading and a final rest for spreading in the skillet occurs a few hours before the ultimate cooking; a mere 20 minutes before the dinner hour is when the toppings are added and the 550°F writes its magical final chapter.

Meal No. 3757: Chicken Bacon Onion Blue Cheese Puff Pastry Pizza

The first Saturday night in December, with its clear and cold pre-winter feel, found me dropping prepped barbecue-spiced chicken thighs into the sous vide, caramelizing onions, crushing cooked bacon into bits, and digging deep into the back of the fridge for blue cheese crumbles. Still at the ready was homemade barbecue sauce, lightly spread onto unrolled puff pastry, and with shredded cheddar cheese down low and mozzarella for the top, it was a satisfying supper of barbecue chicken bacon onion blue cheese puff pastry pizza.

The afternoon was split between quiet time upstairs, with precious moments like this:

...and all the excitement and anticipation as the street filled with staging for the yearly Christmas parade.

This annual event on the first Saturday evening in December brings so much great festive activity. I certainly don't mind being so close even if it means this block is closed off.

When I first moved down here, they staged the mayor in a convertible in front of the house. During other years, it's been dance teams, drum corps, horses, hay wagons, and fancy vehicles with other various local notables.

This year it was a line of Jeep enthusiasts, a cub scout pack, and a few local businesses or industries.

And round the corner on Fourth Street I spied two trucks and a trailer float from QRC Refrigeration and HVAC. I’m willing to acknowledge that QRC's Christmas Parade presence was impressive, and having an abominable snowman as a mascot saves me the trouble of coming up with a better adjective to describe their service.

The parade ends at Corpening Plaza and the great Christmas tree installed there. On Monday evening, as I did my evening stroll, I snagged this photo of it with our grey and foggy city looming all around it.

Meal No. 3731: Skillet Pan Pizzas

Sunday a week ago, before I tossed all my gear into the car to head to the airport for my overnight flight to Dakar, I wanted to have one final home-cooked meal. I'd prepped the no-knead dough on Saturday so that it would be ready for dividing into two cast iron skillets mid-day, where the dough would rest and spread before getting dressed up and roasted at a good high temp. The crisped crusts and the fullness of pizza dough flavors were the perfect bed for the homemade pizza sauce and crumbles of Italian sausage, plus sharp cheddar cheese and a topping of mozzarella as they finished their cook.

Meal No. 3708: National Pepperoni Pizza Day

With a ball of homemade pizza dough tucked away into the freezer, it simplified my hopes of properly acknowledging National Pepperoni Pizza Day, which occurred last Friday. To this diminutive crust (that I found hard to work with) I added a simple thrown-together-but-still-delicious tomato sauce, grated parmesan, shredded sharp cheddar, fresh pepperoni with a l'il kick to 'em, and then topped it all with ample mozzarella cheese. A side salad of power greens and homemade Caesar dressing rounded out the platters in good fashion.

Meal No. 3705: Chicken Bacon Ranch Pizza

Once I'd prepped some no-knead skillet pan pizza dough, I set it aside for a cold ferment in the upstairs beer cooler. When I was ready to actually make the pizzas last Monday night, I thought the small portion of leftover chicken tenders might find a way into it, and I decided that should be an adventurous pursuit. After working up an invented ranch-styled béchamel, the rest of the story wrote itself: chicken, bacon, and cheddar cheese on that surprising ranch sauce. Near the end of cooking, a scattering of shredded mozzarella was the finishing touch. It's a heavy slice once the pies are cut, and all it took was two to feel sufficiently full.

A whole cheese pizza was baked alongside and it was turned into leftovers for the house and an offering for some neighbors.

Perhaps a better choice that evening would have been soup or chili, because the third week of September started chilly and drenched, as we underwent the outer drear of a loose and disorganized tropical system that inundated the North Carolina coast. By Monday evening, Carolina Beach had received 18 inches of rain.

We had an enduring drizzle of mixed intensity, plus all those weird whips of wind gusts that highlight the chaos of this unsettled atmospheric anomaly.

These are days where doggies are a greater management challenge, and yet I know how adorable and cooperative and compliant they are with the wiping and toweling that must occur after each time out.

The persistent drizzle turned heavier at times while the house slept, so Tuesday morning brought the revelation of a new leak spot where it had never been before on the second floor: right over the club chair in the front corner. It got soaked from the hours of slow dripping.

So out went the towels and pans for the continuing rain plague all day Tuesday.

Meal No. 3695: National Cheese Pizza Day

As we cruised through a glorious first week of September, on that Thursday we found ourselves face-to-face with National Cheese Pizza Day, and what could I do but celebrate it with a new pizza crust recipe? While my own version of this dough did not behave like that found in the YouTube video that inspired my experiment, I have to confess that the final product (for me, delightfully nestled into cast iron skillets) was really pretty tasty. The proof, as they say, was in that tasting, even though I spent much of the afternoon certain of catastrophe, given how inexpertly I managed the process.
