Meal No. 4174: Chicken Caesar Wraps

Dateline: Sat 08 Aug. With August well underway by the time we rolled up onto its second weekend, I found myself thinking some spiced grilled chicken was still what the season called for, especially when it could be used for another round of massive chicken Caesar wraps. Freshly homemade creamy Caesar dressing, chopped Romaine, diced tomatoes, and shaved parmesan and Asiago, all rolled up in a flour shell and lightly toasted in the skillet in melted ghee. As long as I still had tzatiki, why not use it as a dipping option?

Meal No. 4173: Chicken Souvlaki on Yogurt Flatbreads

Dateline: Thu 06 Aug. Well, lordy, I went and did it again. Marinated chicken, eased onto skewers, and grilled. Yogurt flatbreads, prepped and ghee’d with reckless abandon. A Greek salad with fresh tomato and red onion. And tzatziki: check!! It was a bit overwhelming to eat two complete versions of these, which I could only manage in open-face fashion.

I might, with enough practice, just come around to the idea that I could become comfortable with the basic challenges of yogurt flatbreads. I’m not pretending they are all that difficult but it is a time-sensitive process that I’d love to perfect so that I can make these for company sometime.

Meal No. 4171: BBQ-Glazed Pork Kebabs

Dateline: Tue 04 Aug. As we headed into August’s first work week, while I was absolutely not working, I had some packages in the fridge whose ‘use by’ dates drove my menu planning. That included pork tenderloin, and as long as we remain in a summer groove, grilling was the cool dude choice. I’ve been really enjoying the simple goodness of barbecue-glazed pork tenderloin kebabs and prepped all the cubes the evening before. A pot of roasted garlic-spiced quinoa and more simple salad with homemade dressing helped make the plate full. Oh, but there was still more room to dip the kebab cubes into more barbecue sauce!

Meal No. 4165: Mushroom Swiss Burgers

Dateline: Wed 29 July. Wednesday nights are for hanging out with longtime compatriot Amy, but as July was ending the City had a catastrophic water main break that left us without water most of the day. That squeezed the meal prep window once service was restored and I figured out how it could happen even if the water was still scarce: Madeira mushrooms and Swiss cheese on grilled juicy burgers. With chips, of course!

Meal No. 4158: Creamy Cajun Chicken Pasta

Dateline: Mon 20 July. On the most recent occasion of a delightful visit and evening hang with UNC chum Chris, as last week launched, we sat down to a new recipe: creamy cajun chicken pasta. I got some chicken breasts spiced and grilled just as the first of the storms rolled through, and back inside the house the pasta was cooking and the creole cream sauce was coming together nicely. We filled our bowls with this fresh addition to the Roediger House options and were glad of it.

Meal No. 4155: Cheeseburgers for Game Night

Dateline: Fri 18 July. Summertime rolls around, which includes the happy stretch of days with my brother-in-law visiting, and the crew must assemble for supper and game night. That was our collective endeavor Friday a week ago, as our hotter July held sway and it seemed best to keep the heat out of the kitchen. So: cheeseburgers to the rescue, fresh from the grill, with chips of choice and lots of homemade special sauce.

With plates cleared away, it was time to bring out our homemade version of Cards Against Humanity, based on the Dark Shadows gothic soap opera from the late 1960s. With answer options that would color the cheeks of the prim and proper among us, it’s prudent to keep the contents on the DL…but we sure get a lot of groans, gasps, and hearty laughs from the gathered souls.

Meal No. 4153: RoHo Crew Gathering

Dateline: Sat 11 July. With more time at home and the feeling of a more leisurely pace in the summer, it’s always a good night if the gang can be brought together for happily hanging out and also hushing up our hunger. As I sorted through the fridge knowing I was about to leave town for a few days for work, I thought it could be a reason to deviate from the norm and offer up something unexpected to the bunch.

That’s how we came to have Mediterranean-style chicken kabobs with more tzatziki sauce but also baby back pork ribs.

I’d gotten the ribs prepped the night before with a good spice coating, and the usual approach here for oven-roasting usually results in something more tender. It was a challenge for the group to harvest as much of the meat as might have been desired, but they were good sports about it.

To bridge the gustatory gap between those offerings, I had chopped romaine with a Greek-style balsamic dressing, plus plenty of chopped Roma tomatoes and diced onion...

...and the ribs seems to require something along the lines of my mother’s stylings for coleslaw, which I’m always happy to chow down on.

And when you get to enjoy the company of such a fine cadre of friends, it’s best not to overlook the simple joys of a terrific dessert like a pan of Ina Garten’s lemon bars, well-dusted with powdered sugar and boosted with an extra punch of lemon tang.

Meal No. 4143: Mushroom & Swiss Burgers

Dateline: Mon 29 June. As we hit the penultimate day of June, I reached for my long-time favorite and faithful recipe to whip up some burger patties to then go onto the grill for a perfect cook. I topped 'em with Swiss cheese and buttered and toasted the buns on the grill as well. Earlier, I'd set to work on Madeira mushrooms; these were ready for me when I came in from the grill in order to assemble absolutely delicious mushroom and Swiss burgers for that evening's supper.

Meal No. 4136: Grilled Chicken Tenders

The happy circumstance of half-priced chicken tenders at the grocery left me with one final package on the first official day of summer, so I seasoned and marinated them and then let the grill take care of the rest. Alongside, there was salad with some fresh flavor-boosted Thousand Island dressing. But a true highlight was a dish of twice-baked cheesy bacon-scallion-sour cream mashed potatoes, highly reminiscent of what the old Raleigh favorite restaurant known as Darryl's would have called "smashed potatoes." (That name conjures something else altogether these days.)

Meal No. 4115: Grilled Chicken & Bacon Spicy Ranch Sandwiches

When Amy was here for her final-Wednesday-of-May hang-time last week, I braved the suppertime sprinkles to grill seasoned chicken breasts, topped with Swiss cheese. I tossed thick-cut applewood-smoked bacon into the oven and finished it with my handy chile rub. I pulled some saved spicy ranch dressing from the fridge and some brioche buns from the cabinet. We made our respective chicken-bacon-spicy-ranch sandwiches to our liking that evening and were filled to satisfaction.

Meal No. 4113: Chicken Souvlaki on Homemade Flatbread

I'm kind of proud of the dinner served up on Memorial Day last week: grilled chicken souvlaki skewers on homemade flatbread with homemade tzatziki. The marinade for the chicken was so very spot on, and then those morsels grilled perfectly on the Weber. The tzatziki was really excellent, too, just the right garlic kick and plenty of amalgamated deliciousness with the rest of the ingredients.

But boy howdy: that flatbread! Tasty on its own but elevated by the melted ghee that sizzled in the griddle, this second recorded attempt at these Mediterranean specialties proved to be more than worthy of our platters that night.

Mind you: they are not hard to make but it is an involved process and consumes more time than I was planning for. I'm pretty sure when I make them again, I should break out the Blackstone griddle.

Between rolling them out individually, brushing them with melted ghee, but then doing five minutes per side in a single skillet...let's just say dinner was about 45 minutes late.

But let's contrast late with early, because in the quiet of that evening, as I ventured out for a sit on the driveway, I also got to hear the first cicada of the season. He sounded mighty lonely, with no answering replies that I could hear, but I guess somebody's got to be the first to emerge at the call of coming summer.

Meal No. 4108: Grilled Ribeye Steaks

The somewhat decent sale (relatively speaking) on a value-pak of ribeye steaks helped make the call for my supper plan on Wednesday evening of last week. It was the usual night for dear friend Amy to be here, and we are accustomed to all kinds of meals together, from simple and cheap to more involved or even a nudge pricey. But it was well worth it to serve up those generous portions of beef once the grill had done its justice to them. We also had baked potatoes with butter (and sour cream, if you're into that sort of thing), and a side salad topped with some homemade creamy Caesar dressing. It was definitely not the kind of meal that leaves you hungry afterwards!

And yes: Sumner took up his preferred position at the feet of our guest, comfortably tucked in close at hand and with his head resting across the iron frame of the kitchen table.

Meal No. 4103: Grilled Chicken Salads with White Balsamic Dressing

Having found it so acceptable last week when I made it for the first time, I had to make up a fresh batch of creamy white balsamic dressing this past Friday. Along with it, I grilled a mess of seasoned chicken breasts in the glorious late afternoon sunshine (another picture-perfect spring day!), which were then diced to go atop our greens. It seemed a fine time to take the extra step of finely slicing strips of carrots along with thin discs of cucumber. It proved a hearty offering that was not heart-offending. That suggests victory all 'round.

Meal No. 4092: Grilled Chicken Caesar Wraps

It seems sort of quick to return to grilled chicken Caesar wraps, based on meal numbering. But with my school-year-ending work travel to finish out the month of April, I’ve not been home to cook. The good memory of that first trial was tainted by a fear that beginner’s luck was key to that previous success, and Sunday night was my test. I passed, once again with weak technique but also with flying colors.

Meal No. 4087: Grilled Chicken Caesar Wraps

Oh my goodness: Sunday a week ago the main meal of the day appeared at lunchtime, and it was a delicious doozy, if I may say so. Something I scrolled past on Instagram planted the idea to make grilled chicken Caesar wraps with the final two burrito shells still hanging out in the fridge. I prepped and seasoned some flattened chicken breast and grilled it to a perfect juicy conclusion. I pulled the last of the latest batch of creamy Caesar dressing out of the fridge. I shaved fresh Parmesan from a block I had on hand. I chopped Romaine. When the chicken was cooked and properly diced, I piled it all high and then inexpertly rolled it all into a bulging wrap. These went onto the grill for a sealing sear and to melt the shaved parmesan down a bit. In the end, these were pretty stupendous, for such a simple concoction. I kept thinking about those wraps for a good portion of my drive to Richmond once I was packed up and able to head off for a week of work in Virginia.

At least I'd gotten the grass cut before leaving town for the week!

Meal No. 4084: Grilled Pork Kebabs with Barbecue Glaze

The Wednesday is gonna be wondrous with a Williamson here. Of course, that's the maiden name for dear friend Amy, a long-time friend and regular of the Roediger House. It's a mid-week treat when she makes her way over here for supper and hanging out, as occurred last week on Tax Day (and boy howdy did it feel good to actually have taxes completed several days in advance, contrary to my usual practice). On our plates were barbecue-glazed grilled pork kebabs, plus quinoa and a side salad. This is a delicious and simple main feature that was ideal on such a perfect Spring day, even though we were a bit warmer than one would expect for this time of the year.

Meal No. 4081: Bacon Chicken Swiss Spicy Ranch Sandwiches

Sunday was another gorgeous day, although I spent the first two-thirds of it working on finishing up my 2025 taxes. Still, there was enough outside time, especially with the recurring demands and expectations of the house pups, and I knew it needed to be a night of grilling. Since a neighbor was coming over, and with a sad memory of a previous version of the night's menu from about 20 meals ago, I thought I'd go for a different approach to bacon chicken spicy ranch sandwiches. I spiced and grilled the chicken to a marvelous perfect temp and char and let some thick slices of Swiss cheese melt lazily upon them. I prepped oven-baked chile-rubbed thick-cut bacon. I pulled out the spicy ranch dressing I'd made recently. Some brioche hamburger buns came out of the cabinet and harvest cheddar Sun Chips gave us the side snack. It turned out pretty darned amazing, really, and I was quite pleased. Given that the picture above only shows you the slabs of thick spiced bacon, you might not realize how good that chicken actually was:

Meal No. 4080: Juicy Burgers on the Grill

After having a mostly gorgeous spring Saturday to enjoy last weekend, even though a few light sprinkles managed to pass through, it certainly made grilling cheeseburgers all too tempting to resist. When I initially patted them out the burgers, I tried to bring 'em down in size from customary practice, mindful of all the recent ups and downs on the ol' morning weigh-in. Eh, maybe a bit too slim for all that tasty brioche bun on which they sat? Perhaps. But the last of a recent batch of homemade Thousand Island dressing, stepping in for the special sauce, plus Harvest Cheddar Sun Chips: that did me just fine.

Sumner made clear his preference for as much time outside as could be mustered. On a day like that, it was an easy demand to satisfy, although just after I took this photo, we started getting those afore-mentioned sprinkles.

Meal No. 4079: Bang Bang Chicken Skewers

Barely a week passed after the initial trial of bang bang chicken skewers and I had to bring them back promptly, especially with fresh ideas about how to tinker with and improve the recipe. That was the plan Wednesday a week ago, when the household celebrated the joyous return of Amy for her regular mid-week visit. Between work, travel, and illness, it had been far too long since this dear soul—so essential to happy Roediger House life—had been over. So we feasted on those bang bang skewers, along with roasted garlic-spiced quinoa, and a smattering of roasted broccoli florets.

Meal No. 4075: Bang Bang Chicken Skewers

Last Thursday night saw the happy return of Kristen and Mookie after too long a break without their being here for a Roediger House supper. I got my ideas clear about dessert but pulled the trigger much later in the afternoon on the evening meal. It took idle Instagram scrolling to give me the idea: grilled bang bang chicken skewers, along with roasted garlic quinoa and a side salad. For a first trial of a recipe for company, things turned out pretty well! The chicken was perfect, with good flavor both from the spices and the bang bang glaze. I made a batch of mildly hot honey, too, and with additional bang bang sauce, those morsels from the skewers were a real hit. A new batch of homemade Thousand Island dressing was preferred by most but some previously-made creamy Caesar dressing was an option, too.
