With Amy and Gern on hand for dinner last Saturday night, and knowing that Amy is just doing so much amazing cooking in their new home in Ardmore, I figured I would not even try to compete. Instead, I brought out a comfortable favorite that I think they've typically enjoyed: Mexican chicken and rice, or arroz con pollo, if you prefer. It is a full-flavored and hearty dish, made all the more enticingly evil with some basic but spot-on white cheese dip to glop on top.
