Meal No. 3041: Roasted Salmon and Brussels Sprouts

A month ago today was the last time I made roasted salmon, so when I stopped off at the Harris Teeter not far from High Point University last Thursday, I was happy to see plump slabs of salmon to bring home for that night's supper. I seasoned Brussels sprouts after shaking them up in olive oil and roasted them to a deliciousness to go alongside. Salmon makes me happy.
