On Day Nine of my 10-day covid isolation period, it was a Sunday that coincided with National Filet Mignon Day, and I was there for it. Prepped vacuum-sealed steaks came out of the freezer to go into the sous vide, and then they were finished off with a good skillet sear. Meanwhile, I cubed potatoes and shook 'em up with olive oil and plenty of seasonings so that they could then roast to a crispy outside/creamy inside state to go alongside. Having made no grocery runs to restock the vegetables, I couldn't add a green side item...but none was really needed if you ask me.
