It has taken me a ridiculous 14 months to get around to making again the deliciousness that humbly purports to be carrot cake oatmeal. It is soothing, filling, lightly-spiced, and wonderfully hearty. Once I'd made it the first time back in January 2020, I turned around and made it a second time, within days. And then last Saturday, as we braced ourselves here in Winston-Salem for a quick onslaught of rough thunderstorms, it was just what the Doctor Jones ordered.
