Meal No. 2817: Chicken Thighs and Brussels Sprouts

'Twas a simple dinner that was called for last Sunday night, with the ease of sous vide for some vacuum-sealed and prepped chicken thighs that were tucked away in the freezer. A sizable batch of Brussels sprouts, nicely coated in olive oil and seasoned straightforwardly with salt and pepper, got a good roasting to a crisp-tenderness that was very nearly ideal.
