Meal No. 2791: Sheet Pan Beef Nachos

I am so glad that the forecast for this past Thursday was so wrong. Initially we were promised clouds, possible rain, and cooler temps. But we got up to the high 60s again under full sunny skies, and Sumner and I did a massive walk that wore both of us out. 

We really did overdo it with just over 5.5 miles, but what a glorious and picture-perfect day for so doing. What made the day even better was the appearance of the earliest crocus blooms popping up at the front edge of the grove. I am more than ready for springtime!


I'd pulled a brick of ground beef from the freezer stash a couple of days ago, to let it thaw in the fridge, but had no definite plan for its use. With a well-worked-up appetite from enjoying gorgeous sunshine and vigorous outdoor activities, I was seduced by the allure of an indulgent meal: sheet pan beef nachos. Tons of cheese, deliciously-spiced taco meat, black beans and shoepeg corn and even more chopped onion, too: Oh, so good!
