With the arrival of dear Oklahoma friends for a week's stay on July 1st, including amongst them those requesting accommodations for vegetarianism, the meal plan that Monday night showcased my belated discovery of pizza fascinations. To round out our oval platters, I also had salads with choice of homemade dressings.
It gave the appearance of being quite a spread once it was all laid out on the buffet counter. (Around here, buffet-style is how we do meals.)
I was ready for a second trial of Detroit-style pizza, and that one was half pepperoni and half cheese:
I also made two skillet pan pizzas. One was a pesto-based ricotta and Madeira-sautéed mushroom...
...the other was a more standard sausage:
With a Costco-sized bucket of spring mix, folks could select or mix-and-match from the three dressings I'd made: creamy Caesar (from several meals ago), Sunshine lemony honey mustard, or lime avocado.
After a brief spell of rest and recovery, I brought out chocolate tres leches cake for our dessert. This more recent discovery, in rather an old recipe magazine, has proven to be well worth any small effort required to create it.
Already ahead of the curve because of the three milks, it really is perfectly topped off with that slightly sweet, slightly tangy chocolate whipped cream. It always feels like a light dessert even as the last forkful makes clear that it is anything but.
