Back on Monday, March 6th, the RoHo crew of regulars gathered for the first time in weeks, and on this occasion it was in honor of Kristen's recent birthday. I was left to my own devices in planning out the menu and took advantage of the nice sale I'd come across on pork shoulders—perfect for piloting a new recipe for mojo pork roast. With an elevation in the authenticity that comes about when the recipe author draws on his own deep cultural roots, the evening's centerpiece was a marvelous pile of succulent lechón asado, onion-y and garlicky, with warm spices and the tang of the citrus it was cooked in. The cooling creaminess of avocado-cilantro lime sauce helped it become suitable to sandwiches—and this batch of it was particularly stunning.
And why not keep on pressing the quality envelope of the meal through homemade buns, with eager dependence on the recently uncovered "Beautiful Burger Buns" recipe from my faithful guides at King Arthur?
Oh, so very much better than storebought ciabatta rolls, as past practice indicates I was willing to settle for.
This meal called for Mexican coleslaw, so I broke out the air fryer to up the ante with a pseudo-grilled corn effect, to a worthy end. With a small touch of heat in the creamy dressing, and with roasted bell peppers and black beans as well, this was a hearty side (or sandwich topping, depending!).
We had ourselves a great evening, because that's what a gaggle of good friends like this makes possible.
