Memorial Day 2022: sunny, hot, and quiet in downtown Winston-Salem. Could've been a day for grilling but I had a recipe that I wanted to try out instead: filets and fideos. So I still got my steak fix but these were seasoned, pan-seared, and finished in a very hot oven. In the meantime, I prepped and cooked up a batch of fideos (noodles) with seasonings as well as onion, bell pepper, garlic, corn, and tomato. It was a nice variation that proved to be an excellent lunch.
