After the double-crust chicken pot pie dinner last Friday night, I also had a dessert ready to serve up: Eddie's apple tort. A wonderful homemade meal-ender, with a basic sweetened crust, a light almost-cheesecake-like layer of filling, and then sugar-and-cinnamon thin-sliced apples on top. It was just right for the four of us that night.
Recipe for Eddie's Apple Torte shared by Thomas H. Estes, Professor Emeritus of the University of Virginia, on 09 December 1997. His closing comment on that email is as follows: "Please think of Eddie and all other victims of the AIDS epidemic when you enjoy this recipe."
