Dateline: Mon 17 Aug. My longtime friend and fellow Wake Forest University compatriot Matt came through town a couple of weeks ago and was a delightful overnight guest. With his arrival timed in consideration of the old men’s dinner hour, we were able to gather at the table for nice-and-spicy arroz con pollo. It’s been just barely over a year since I made this dish, and it always proves pleasing. The addition of Mexican white cheese dip feels indispensable, and it was the dairy, not the cherry, on top.
