Dateline: Mon 10 Aug. As is often my prologued lament once I finally get around to having salmon: it had been too long. But after my annual physical out in Mocksville, I found good-looking fillets on a special at the Tanglewood Harris Teeter, brought home a 3-pounder, and spiced and roasted it. Another fresh batch of creamy Caesar dressing went on that spring-and-spinach mix to give the supper bowls a bounteous evening repast. You might still hear the rebounding echo of my satisfied lip-smacking.
