Sometimes I feel like this is the meal I make when I'm taking the easy way out, but it doesn't make it any less delicious or compelling. I'm talking about Cuban pulled pork sheet pan nachos, along with lime crema. Well-toasted in the oven, cheesed to an excessive parallel dimension, that's what was served Thursday before last. Did it nudge the next morning's weigh-in past what I'd like it to be. Of course it did.
