Meal No. 3006: Slow Cooker Pulled Pork Barbecue

The first Sunday of 2022 dawned wet and dreary and rather miserable on the outside...but it was warm and cozy inside the Roediger House. When I got up just before 6 am, it was to the enchanting aromas of the overnight slow cook of a Boston butt pork roast, in anticipation of an evening meal of pulled pork barbecue with sweet and tangy homemade barbecue sauce...and a heaping portion of sweet Southern coleslaw, based on the way my mother used to make it. Just because we were coming down off of the holiday break, and looking ahead to the return of a more normal work schedule, did not mean that the good meals had to be put aside just yet.

Barbecue Sauce for serving was adapted from "Sweet and Tangy Barbecue Sauce" from recipe for "Indoor Pulled Pork," by Bryan Roof. In Cook's Illustrated, January & February 2010 (No. 102), p. 6-7.
