It's been over two years since I made the rock-solid RockRecipes.com version of red velvet layer cake, and this past Valentine's Day seemed like just the right incentive to bring it out of the archives. Barry Parsons has a deft touch with velvet cake recipes, and I've tried and loved several from his blog over the years. But there really is something special about a good red velvet cake, and I'm always happy if the occasion calls for it and I step up with the right response. For the four of us hanging out that evening, there was a resounding delight to know second pieces were on people's minds.
