As a mid-day meal before I tossed my bags into the car and headed down to southeast Georgia on Sunday a week ago, I put oil-rubbed and herbed chicken thighs into an old Pyrex dish from my mother and baked 'em up good and juicy and tender. I also roasted broccoli florets and prepped a simple stovetop stuffing. These made for ample piles on my plate, for sure, and it was all more than satisfying. Did it make me a little sleepy during the easy first hour of the drive? Maybe. But I made it safely to the warmer reaches of the Golden Isles and was glad to leave behind all the snow and ice that's lingered in Winston-Salem.
