It was dinner for three this past Friday night, and on the menu was a delectable sheet pan of beef nachos, along with a fresh batch of lime crema. (The helpful shortcut of the evening was pulling a vacuum-sealed bag out of the freezer to drop into the sous vide, because this taco meat was prepped a while back when I was caught with too much fresh ground beef.) It was immensely satisfying and left us barely enough room for the lighter dessert that followed, which will be described in a subsequent blog entry.
