With company in town over the weekend leading up to the Fourth of July holiday, dessert rose on the priority list. On Sunday, following our delicious pan pizzas, I wanted something lighter and crisp, given the size of the dinner and the heat of the day. Atlantic Beach Lemon Pie stepped into that role perfectly. With its Ritz cracker crust and lemony punch, it is the coastal North Carolina cousin of the more famous key lime pie (one of the few good things to be found in Florida). Easy to put together and always impressive in the final result, the slices are almost always both too large and too small, and certainly that pie is also often too fast gone.
