This past Tuesday seemed a great time to bring back another pan of beef nachos that always hit the spot. I had a fresh tomato on hand and went ahead and bulked things up with the addition of black beans and shoepeg corn, plus tons of Mexican cheese so that there'd be an overabundance of temptation when the leftovers were lurking for the next few days.
