Meal No. 2636: Broccoli Cheddar Soup
Last Wednesday night felt like a good soup night, in spite of the heat and humidity of this July, and I turned to the Panera-style broccoli cheese soup that I hadn't made since last November. I've toyed around with my techniques for these cheesy creamy soups (like the recent batch of potato cheddar soup), trying to achieve a desirable thickness without subtracting from the good taste. It was closer to what I like that night and more than sufficient to fill my belly...but still leaving room for a bit more homemade vanilla bean ice cream (and yes: with another spoonful of edible brownie batter).
