Dateline: Sat 12 Sept. Long ago I left behind pretense about what constitutes a true Caesar salad, and for me it’s enough to know that I made a delicious creamy Caesar dressing and I’ll let it adorn whatever lettuce or spring mix or greens I have put in a bowl and ordained as “salad.” A couple of Saturdays ago, my Caesar-dressed spring mix was heavily laden with wonderful grilled souvlaki-style chicken kebabs (well, I de-skewered the morsels of chicken to put atop the salad). All that good marinade boosted that nicely-grilled chicken breast, and to me salad is always pleasing.
