Dateline: Mon 08 June. Monday a week ago included a run to Costco, and that meant there was a rotisserie chicken ready for deboning. Then, I found myself curious about exploring some heretofore untried recipe. In this case, it was a pretty straightforward chicken and pea penne casserole which was tasty enough without any socks being knocked off. For that evening's meal, it did its duty. The lambrusco brought by that evening's guest surely helped.
