Meal No. 3474: Skillet Beef Stroganoff

One of those much-loved easy and filling meals that therefore gets repeated appearances here was pulled from the time-out shelf this past Tuesday around mid-day: Emeril's skillet beef stroganoff. The balance of a big container of mushrooms used for the weekend's batch of chicken and wild rice soup, and ground beef I'd gotten on the last Costco run, made this a judicious choice of the moment. It's a terrific one-bowl meal, served over egg noodles, nicely spiced from Emeril's recipe for copycatting his New Orleans-style "Essence" mix. As that Halloween Day chugged slowly under weighted grey skies, with a temp that barely reached 50°F, it was a satisfying mid-day repast.

Also, let me tell you how awful I feel not to have had on hand ANY candy just in case trick-or-treaters came by the house that night. In 20 years, I have had perhaps costumed kids maybe two other times, long long ago, and boy howdy did I really let down the excellent crew who paid a hopeful but ultimately disappointed visit to this Spring Street abode.
