I'd gotten a whole salmon fillet on a Costco shopping trip, knowing its destiny resided in two delicious meals to come. One of those was the feature of yesterday's blog post: a creamy Caesar-dressed pile of spring mix topped with spiced roasted salmon. Then, last Wednesday, all the rest of that cooked salmon was turned into tasty salmon croquettes, along with roasted spiced broccoli florets. What really makes this dish, though, is the amazing chili-lime-garlic aïoli, from a recipe shared by dear friends in New Jersey, that has enhanced meals for a decade and a half around here. For the three of us in our customary Wednesday night meal together, we left the table happy and content.
