The first Wednesday of June rolled in with plenty of good vibes, and by special request the evening menu offered up a slightly different take on jollof rice with spiced chicken. This time it was the oven-baked route, and I probably left it in too long, but boy howdy was it all delicious. And abundant, so there were leftovers to share around and some to keep on hand.
