Meal No. 3746: Loaded Baked Potatoes

Last Tuesday brought about a rather unusual supper at the Roediger House: a loaded baked potato, with plenty of butter and sour cream and cheese and chives and bacon, plus the right amount of salt and pepper. An hour at 400°F, after coating the washed skins with vegetable oil and sprinkling on some kosher salt, laid out on a small sheet pan: surprisingly filling and complete.
