Meal No. 2453: Chicken Tikka Masala


With my more careful monitoring of diet and food intake, I've definitely tried to stay away from rice. The few times I've had it over the last year to eighteen months, it's pushed the next morning's weigh-in into unpleasant territory. But Tuesday night I was ready to make an exception since I was craving homemade chicken tikka masala, which I served over brown rice along with roasted broccoli. I'm clearly out of practice, because the brown rice required a second cooking cycle, but it proved to be a tasty meal.
