Meal No. 1110: Deviled Chicken Thighs
The recipe works well for drumsticks because there's all that skin and surface area for the delicious coating, but thighs are a close second. This evening, I think the macaroni and cheese casserole was the best it's ever been, likely because of how the smoked gouda I added really brought it up to another level. It's a shame I didn't get this onto the table until after 11 pm. That's a late Friday night dinner, for sure.
It's also worth noting that North Carolina got some huge news today: the hateful Amendment One that was passed in 2012 was struck down by a federal judge who declared it unconstitutional. I rather like the idea that love wins the day, that equality matters, and that there can indeed be "liberty and justice for all."
