On this Monday afternoon, I have to get the car packed up and head up to Virginia for a week's worth of work in Shenandoah County. It's been a nice month of not working, but I'm going to have to get myself back into the swing of things! Plus, I guess I better try to earn some money since I've been indulging in a lot of time off.
So rather than content myself with the ample leftovers from the last few meals, I had a hankering to put my oversupply of eggs to use and make a late afternoon/early evening meal of breakfast food. Scrambled eggs with mexican cheeses and chives, hot sausage patties, grits with plenty of butter and salt, toast and jelly, and a tall glass of OJ.
