After working all day with instructional coaches in Winston-Salem/Forsyth County Schools, and knowing I was set to depart for the rest of the week in Richmond County, NC, I still wanted to get one more meal made this week. The choice: grilled Argentine-style beef skewers with chimichurri sauce over rice, with baby Brussels sprouts and a Pepsi Throwback.
