Dateline: Tue 07 July. Among the dish wish-fors when my brother-in-law comes to visit is this spicy and cheesy Afro-Caribbean beef and macaroni casserole. It’s worth asking for, if you ask me, given its spice and flavor profile, its hearty goodness, its comfort cache. Two weeks ago found full bowls of those bites, immaculate as promised by the dish's developer, and happily partaken of by the crew on a summer Tuesday eve.
