As noted in a recent blog post, I've been in the midst of a fairly full and intense work and appointment schedule, with some travel mixed in, and I'm having to dig into the freezer reserves to come up with simple but decent dinners. Last Wednesday, I rather liked the idea of a sheet pan approach to beef nachos, piled high and exceedingly cheesy, accompanied by a fresh batch of lime crema. All too good, so I had too much.
