Last Thursday night, I sort of threw together a mix of ideas to create sheet pan beef nachos, and they were frickin' incredible. I regretted and then completely did not regret going back for a whole 'nother plate after I polished off my first serving. I'm-a have to make these again—soon!

While dinner was great, the day's weather was unbelievably crappy: rainy all day long, and cold! I had to have me a fire going while I was stuck at home.
