Meal No. 2583: Deviled Chicken Thighs
Apparently we haven't had enough weirdness, so an odd spring polar vortex event occurred this past Friday, bringing a blitz of bluster and a chilling change to the temps. It was gray and drizzly as the afternoon proceeded towards evening and the mid-afternoon sprinkles finally chased me inside from my yard projects. I was ready for a meat and two sides kind of dinner, so the plates had deviled chicken thighs, wilted spinach with garlic, and homemade red-skin mashed potatoes. I probably didn't burn enough calories with yardwork to justify the greedy gobbling I engaged in.
