Atlantic Beach Pie
With summer coming closer all the time, and talk here and there about who might head to the beach and when, my thoughts came back around to the phenomenal Atlantic Beach Pie that started showing up around the Roediger House within the last couple of years. A staple of Tar Heel coastal cuisine, it was "discovered anew" and popularized by Chef Bill Smith of the famed Crook's Corner restaurant in Chapel Hill.
It's always good to have on hand, and it helped finish up last Thursday's meal with a nice sweet ending, but I think I was using lousy lemons or something. There was no lemon taste in it, and that was terrifically disappointing.
