Meal No. 337: Deluxe Pot Roast


Dinner for a crowd with the contrived theme of "Irish Night." I lack for great Irish dishes in my cooking repertoire so I decided to do a pot roast with potatoes and carrots, served over rice. Flavorful but I think the meat could have cooked longer.
