Meal No. 495: Scallop & Asparagus Risotto


A full day of yardstuff, including finishing the patio pad outside the back kitchen door and also cutting the grass.

And I still had time to come in and whip up this kickin' awesome meal: pan-seared scallops over asparagus risotto. It was a little bit invented but mostly based on Emeril Lagasse's shrimp and asparagus risotto casserole.
