It was brutally and bracingly cold in Winston-Salem all day on Thursday, so I had to take a break from my mulch endeavors and spent most of the day inside. That gave me a chance to make a pretty tasty batch of southwestern Caesar dressing that brought that evening's meal together. Topped with a perfectly-roasted slab of seasoned salmon and adorned with tomato, avocado, black beans, shoepeg corn kernels, and even some lime-and-chile tortilla strips, it was a salad extraordinaire.
The cooking perfection on salmon of late has been entirely due to utilizing my CyberQ temperature probes, I might add.
Southwestern Caesar Dressing was my creation but was based on:
