Meal No. 1472: Poppy Seed Chicken
The dinner this past Thursday night can be made using an easy version, or you can up your game and be more delighted by the result if you go with the slightly more involved recipe. The better version was my choice on the last Thursday of January, and it was powerful good. I chose this dish in part because it makes good leftovers, which I wanted to take and share for my final day of work with the instructional leadership team at an elementary school in Greensboro the next day.
For this meal, some steamed broccoli and more of the homemade applesauce were perfect sides.
By the way: the easy version of poppy seed chicken, which we always called 'Bama Chicken, was such an early favorite of the household that it was made three times when the new kitchen was first completed....Meals No. 3, 7, and 14.
