Those
delicious sweet pork pan nachos from Sunday night left me with some leftovers from the prep: a container of sweet Cafe Rio shredded pork, creamy queso, diced red onion, corn and black beans, and sour cream sauce. Seemed only logical that I should make up a fresh sheet pan of nachos, then, to save the aggravation of inspiration or creativity. That was the main meal on Wednesday.
