Meal No. 2153: Chicken, Bacon, & Caramelized Onion Sandwiches

I thought I'd throw together a sort-of-invented dinner tonight, with grilled seasoned chicken breasts serving as the workhorse, topped with caramelized onions, white sharp cheddar cheese, and pesto mayo, sitting also on bacon within a knot roll (I didn't have the roll, though).
