It was a long, long drive back home from Oklahoma Sunday, and after an afternoon nap, I ventured into the kitchen looking forward to once again making a meal...something comforting and relatively easy. I tinkered a bit with recipe for an Afro-Cuban-influenced macaroni beef casserole and came out with a delightful dish for dinner.
