Meal No. 2069: Chicken Salad Melts


This past Saturday was awesome, because it marked the one-year anniversary of the arrival of rescue pup Sumner to the Roediger House. And it was weird because it rained a lot and snowed some too. It was a fine day to be inside, once I'd run early morning shopping errands. At lunchtime, I put the previous evening's chicken legs to good use in a homemade chicken salad which I then used to create chicken salad melts on buttered toasted brioche buns. I'd never made those before and those sammiches were awesome.
