On Friday night, with the colder temps of winter and an icy wind blowing about, I was at a low point on meal-prep motivation while also feeling high resistance to having to go outside for any reason. Then, a small idea inserted itself into my noggin and set off all the right sparks, and I tackled it so enthusiastically that dinner was ready over an hour earlier than usual. And what a great new meal it turned out to be: chicken Philly cheesesteaks with a goofy and amazing simple cheese sauce. It was messy to eat but a blessing in my belly.
