Meal No. 1518: Arroz con Pollo


After my initial trial of this a few months back, I decided I really liked this Cuisine at Home take on Mexican chicken with rice, especially when topped with a spot-on white cheese dip. This was the Monday night feast for the bellies around the Roediger House dinner table, and we were all pretty pleased.
