Last Tuesday was phenomenally and iconically springlike and I was glad I got home early from my day of working in Greensboro. Because I'd missed lunch, I had to eat the remaining plate of leftover poppy seed chicken casserole just before 3 pm, and that meant I needed a light supper that evening. Hence, a second go at the amazingly airy and full-flavored featherweight buttermilk pancakes:
