Meal No. 1327: Indoor Pulled Pork Barbecue

It's a fun challenge trying to put together the right meal to have on hand when a large crew is coming in from out of town, with a highly uncertain arrival time. That was the case last night when a carload of four good friends drove in from Oklahoma.

For snacking, I had pimento cheese and creamy stuffed eggs:


The dinner itself was indoor pulled pork barbecue along with eggy potato salad and blue cheese coleslaw. This turned out to be a good choice because storms, an accident up ahead on the highway, and a detour through Virginia meant the Oklahoma posse didn't arrive until nearly 11 pm.
